Tips for delicious soup for hotpots

     For different hotpots such as hotpots with chicken, paddy crab paste, mixed hotpot and Thailand hotpot, delicious soup will help to make hotpots much tastier. The followings are some secrets to delicious soup for hotpots that we would like to introduce to you.

1. Choosing pork bones
     Fresh bones: Immutable principle is choosing fresh pork bones for hotpots because tainted bones with bad aroma will ruin your hotpots. Pig’s head should not be used for the soup due to its stink. It is recommended to choose small bones and tail bones for delicious and sweet soup.



For safety, pork bones should be bought from butchers with identified source of meat, specified prices, slaughter and use time.

2.Choosing ingredients:
You’d better keep in mind that each hotpot has a unique recipe.
- Chicken hotpot:The soup for chicken hotpot must contain pork bones, chicken bones, dry onion, grilled ginger, 1-2 citronellas, pineapple and tomatoes. Add traditional herbal medicine (thuốc bắc) and expanded mushrooms.


Beef hotpot, duck hotpot:
Grilled ginger, scallion and citronella are usually added to the soup for beef and duck hotpots. Grilled ginger and scallion are fried without burning shells to produce clear soup in eye-catching color. Anise flowers, cinnamomum and black cardamommay be added to beef hotpots.


Seafood hotpot:
Ginger, citronella, pineapple,celery, shacha sauce are required for this soup to produce sourness and sweetness without seafood aroma.
- Paddy crab paste hotpot:
Addition tobones and flesh, rice vinegar and fried tomatoes should be added to produce sourness and sweetness for the soup.

3. Cooking time:
         Pork bones need to be submerged in boiling water for dirt removal, then clean them with cold water. Pour cold water into a pan and add bones to boil. Turn the fire down when it is boiled. Remove foam when it gets hard and keep small fire.
